Coconut Overnight Oats

An Ideal Start To Your Day

This recipe for coconut overnight oats is packed with beneficial vitamins, nutrients – and a healthy helping of chia seeds + blueberries for garnish gives it a powerful antioxidant boost!

Here’s what you need to make it:


  • 1 ½ cups gluten-free oats
  • ½ cup flaked coconut
  • 1 tbsp chia seeds
  • ¼ tsp vanilla
  • 3/4 cup coconut milk 
  • 1.5 cup non-dairy milk of choice 
  • 1-2 tbsp maple syrup
  • Blueberries for garnish and taste

Coconut has recently become a staple in a balanced diet, and for good reason! It’s high in fiber, which can lower blood pressure and reduce the risk for heart disease. 

It’s also high in healthy saturated fats, aka, “good” cholesterol. All saturated fats should be taken in small amounts only of course.

Chia seeds are high in fiber and protein, which helps you feel full and satisfied. These little seeds are also antioxidant-rich and high in healthy Omega-3 fatty acids, which all help to reduce inflammation, lower blood sugar, and promote bone health.

The omega-3 content is especially beneficial – it’s a natural pain reliever and has great benefits for your cardiovascular health.

Maple syrup is one of the most natural sources of sweetener available. This is not processed at all.

Directions: Make Ahead For A Healthy Breakfast!


In a large bowl, mix together your oats, chia seeds, and coconut.
In a separate bowl, whisk together your coconut milk, non-dairy milk, vanilla, and maple syrup.
Add wet ingredients to your dry ingredients and mix to incorporate
Portion these oats into sealable containers and allow to chill in the fridge for a few hours or even overnight to thicken.
Serve with fresh fruit and a drizzle of honey, and enjoy!
