Buckwheat Pancakes
Today we’re making hearty and delicious buckwheat pancakes. These pancakes are a great, healthy alternative to white flour pancakes, easy to make and are also gluten free!

Buckwheat Pancakes

Ingredients

- 1 cup buckwheat flour
- 1 tbsp stevia
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1 large egg
- ½ tsp vanilla extract
- Butter for the skillet

Directions

STEP 1
Start by mixing the flour, stevia, baking powder, baking soda and salt in a medium-sized mixing bowl to make sure the dry ingredients are fully incorporated. Mixing these first ensures that you don’t have any pockets of unmixed ingredients in your batter.
STEP 2
In a separate bowl, mix your wet ingredients. Whisk together your buttermilk, egg, and vanilla.
STEP 3
Mix your wet and dry ingredients together until a thick batter forms. Make sure that your batter is free of lumps, but make sure not to overmix.

STEP 4
Add about a tablespoon of butter to your skillet along with a ¼ cup of your batter. Cook until bubbles form on the surface, about two to three minutes. Flip, and cook for another few minutes until golden brown.
STEP 5
Repeat with the rest of your batter.
STEP 6
Serve hot with fresh fruit and a drizzle of honey or maple syrup, and enjoy!
