Coconut Overnight Oats
Today we’re making simple + delicious overnight oats! This plant-based recipe is a great, easily customizable option for a healthy breakfast on the go.

Coconut Overnight Oats

Ingredients

- 1 ½ cups gluten-free oats
- ½ cup flaked coconut
- 1 tbsp chia seeds
- ¼ tsp vanilla
- 200 ml coconut milk
- 350 ml non-dairy milk of choice
- 1-2 tbsp maple syrup

Directions

STEP 1
In a large bowl, mix together your oats, chia seeds, and coconut.
STEP 2
In a separate bowl, whisk together your coconut milk, non-dairy milk, vanilla, and maple syrup.
STEP 3
Add wet ingredients to your dry ingredients and mix to incorporate
STEP 4
Portion these oats into sealable containers and allow to chill in the fridge for a few hours or even overnight to thicken.
STEP 5
Serve with fresh fruit and a drizzle of honey, and enjoy!
